MorgenStund' Gingerbread Men
| 300 g | wholemeal spelt flour |
| 150 g | MorgenStund' |
| 100 g | ground almonds |
| 1 tsp | tartar baking powder |
| 125 g | soft butter |
| 100 g | cane sugar |
| 2 tsps | gingerbread spice |
| 1 | egg |
| 200 g | sugar beet syrup |
| 1 | salt |
| gingerbread men/ reindeer cookie cutters, or others | |
| royal icing powder | |
| organic red food colouring | |
| piping bag with thin nozzle or decorating pen for decorating |
Cream together the sugar, butter, gingerbread spice and a pinch of salt. Add one egg and the sugar beet syrup and whisk the whole thing. Add MorgenStund', ground almonds, wholemeal spelt flour and baking powder. Mix everything into a smooth dough.
Wrap the finished dough in a beeswax cloth or cling film and chill for at least 1 hour.
Roll out the dough on baking paper or a floured work surface and cut out the gingerbread men and reindeer. Place on a baking tray lined with baking paper and bake at 170 °C fan oven for approx. 8-9 minutes. Then let the gingerbread cool down.
Mix royal icing powder with water. Colour half of the mixed icing with the red food colouring. Pour the mixture into a piping bag or decorating pen and decorate the gingerbread with it.
